Favourite Blowout Meat: Ynyshir

“This has to be Ynyshir by Gareth Ward. Gareth has created his ultimate destination in Wales. His food is exciting, racy and delicious – a real experience unique to him, Amelia and his team”

Favourite Local: Ken Ho

“This is a Cantonese restaurant in Birmingham, which is next door to the Hippodrome and is always busy. It’s traditional and the dim sum is absolutely amazing. I go here three or four times a month for what I call ‘Dim Sum Mondays’. The roast meats there are also incredibly good”

Favourite Cheap Eat: Black Axe Mangal

“I love Black Axe Mangal, it’s everything a chef wants on his day off: amazing flatbreads, wicked vibes and stiff drinks! Lee the owner is ex-St John, another fave of mine, and the inspiration from there really shines through in his food at Black Axe Mangal”

About Brad Carter

Part of a new generation of young, ambitions chefs pushing the boundaries of what British food can be, Brad Carter goes deeper than most into exploring the idea of terroir in cooking. Wild game, foraged herbs, forgotten ingredients and rare-breed animals are the lifeblood of a cooking style that looks to change how we think about our own food.
