Set within the Whitworth Locke Hotel on Princess Street, Winsome has transformed the former Peru Perdu site into a relaxed, stripped-back dining room focused on modern British cooking. The project is led by chef-patron Shaun Moffat, best known for his time at The Edinburgh Castle in Ancoats, where his cooking helped the pub's upstairs dining room earn a place in the Top 50 Gastropubs list. His CV also includes London restaurants Manteca, Hix and St Leonards. Behind the bar is Tom Fastiggi, formerly of Schofield's Bar, while Owain Williams oversees the dining room after roles at Belzan, Madre and Medlock Canteen.
Fans of Moffat's cooking at The Edinburgh Castle will recognise the same produce-led approach, with a regularly changing menu built around dishes designed to feel familiar and comforting. The menu moves through snacks, starters, mains and desserts and centres on ingredient-led British cooking with a strong emphasis on seasonality, regional sourcing and produce from across the UK, ranging from Brixham seafood and Welsh pork to Clyndria beetroot and Garstang Blue cheese.
Fastiggi's drinks list mixes 'hotel classics', original cocktails and no-and-low options alongside an Old World-focused wine list, while the team has also taken over Whitworth Locke's Atrium bar.
